I liked the comment by Racine, the great 17thc writer of tragedies (such as Phedre and Andromaque), made to Jean de la Fontaine - the man behind the fables (the French Aesop): "Oil is used here instead of butter and I did fear the change. But I tasted some of it today in the sauces and, to be truthful, there is nothing better."
Oh, I nearly forgot the marketing spiel: "Provence produce, bearers of light and a certain style of life, appeal to all our foreign visitors," explains Bernard Deydier, from the Regional Chamber of Commerce and Industry. "Because it is Mediterranean, Provence fashion has remained a summer fashion, with designers such as Christian Lacroix and Chacok. But, first and foremost, the Midi is able to market its authenticity. An authenticity that is the exclusive domain of Provence and that must be preserved at all cost."
